Fried catfish stuffed with Cajun boudin, grilled shrimp in crabmeat sauce and crusty garlic bread

INGREDIENTS :

Catfish filets
Cajun boudin
Jumbo shrimp
Crab meat
French bread
Fish fry coating
EVOO
Salt Pepper
Heavy cream
Lemon
Slap ya mama seasoning
Green onion
Garlic
Basil
Parsley

INSTRUCTIONS

The boudin was bought from a local seafood market and it’s delicious. (You can get it fresh or frozen)

Catfish fried in Zatarains crispy southern fish fry coating…..
That is two pieces of fish I put together and spooned the boudin into. (Normally the crabmeat and shrimp goes on top but my hunni likes his fish to stay crispy so I put it on the side)

Grilled shrimp are seasoned with salt, pepper and slap ya mama seasoning then seared in a hot skilled with EVOO for a minute on each side, removed from the pan and set aside.

In the same pan, reduce heat to med low, add chopped green onion and minced garlic, let sautee for a minute or two then add the juice of half a lemon, a half pint of heavy whipping cream, salt and pepper to taste, 1/2 teaspoon of slap ya mama seasoning and 6 oz of real crab meat. Let simmer a couple of minutes and remove from heat.

Garlic bread is French loaf slices with softened butter that has a pinch of garlic powder, basil and parsley mixed together and slathered on both sides. Can be cooked in oven or in hot skillet on stovetop.
