Grilled Tex Mex Breakfast Sandwiches – Gluten Free

Ingredients

8 slices gluten free bread
1/4 cup margarine
2 cups shredded Tex Mex Cheese Blend
2 cups chunky salsa
4 fried eggs
4 slices ham

Instructions

Preheat a frying pan and spray with cooking spray.
Spread margarine over each slice of bread.
Mix the shredded Tex Mex Cheese Blend and the chunky salsa together in a small bowl.
Cook 4 large eggs in the preheated frying pan over medium low heat. Use a toothpick to pierce the yolk.
Flip bread over so margarine side is down and cover 4 slices of bread with half the grated cheese mixture.
Place a slice of ham over the grated cheese mixture.
Place a fried egg on top of the slices of ham.
Cover the fried egg with the remainder of the cheese mixture.
Top with the remaining slices of bread. Margarine side up.
Place the sandwiches in a heated frying pan.
When the bottom slices of bread are nicely browned carefully flip the sandwiches to brown the remaining side.
Slice each sandwich in half.
Serve and enjoy!
