Pecan Butter Cookies

Amazing Peanut-Butter & My Pecan-Cookies are classic peanut butter taste with incredible pecan chunks all on cookies ! Topping them with whole pecans for delicious pecan flavor in these butter cakes!

Ingredients

  • 1 cup pecans (crushed – reserve a full cup for cookie tops, if desired)

  • 2 cups all-purpose flour

  • 1 cup butter (soft at room temperature)

  • 1 cup peanut butter (soft or crunchy)

  • 1 cup sugar

  • 1 cup light brown sugar (packed)

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • Half a teaspoon of baking soda

  • 1 teaspoon yeast

  • Half a teaspoon of salt

  • Directions :

Cream-butter, peanut-butter , sugar & brown sugar jointly in mixing bowl.

1 C butter, 1 C peanut butter, 1 C sugar, 1 C light-brown sugar

Add the eggs and vanilla extract and then whisk them into the butter, peanut butter and sugars.

2 large eggs, 2 tsp vanilla extract

Add the baking soda, baking powder, and salt and mix with the wet ingredients. Stir in flour until combined with cookie dough, then stir in chopped pecans.

1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt, 2 cups all-purpose flour, 1 cup pecans

Covering bowl with plastic-wrap & placing it in refrigerator for 1 h .
Preheat oven 350°F (175°C) & line baking-tray (or 2) with parchment-paper.

Divide the cooled dough with a large spatula to make 1-inch cookie dough balls. Press the top of the cookie dough (if using) or make your usual peanut butter cookie pattern using the teeth of a fork.

Bake the peanut butter and pecan cookies for 10 to 12 minutes or until golden brown around the edges.

Let the baked cookies cool slightly on the baking tray, about 5 minutes, before transferring them to a cooling rack to cool completely.
