Pizza Casserole


1 pound of 97 percent lean ground turkey
1 medium sliced onion

1 garlic clove, minced

2 teaspoons extra virgin olive oil

2 cans 15 oz tomatoes with no added sugar or 30 oz hunts tomato sauce

1 tsp. Italian spices

12 oz. low-carb rotini pasta

1 cup reduced-fat mozzarella cheese, shredded

1 cup mozzarella cheese (non-fat)

32 turkey pepperoni slices, divided (approx 2 oz)

2 TBSP black olives, sliced

If desired, top with more zero-point vegetables.


Preheat the oven to 350 degrees.
Drain the pasta once it has been cooked according to the package directions.
In a large skillet, heat olive oil over medium heat and cook ground turkey, onion, and garlic until meat is done.
Coat a 9 x 13-inch baking pan with cooking spray.
Combine cooked pasta, meat mixture, sauce, 1 cup cheese, 16 pepperoni, and Italian seasoning in a medium mixing basin.
Mix thoroughly.
In a baking pan, evenly distribute the pasta mixture.
Add the rest of the cheese, pepperoni, and olives on top.
Bake for 20 minutes, covered in foil.
Uncover and bake for another 10 minutes, or until well cooked.
Using a knife, cut the cake into 12 equal servings.
