Vegan Ramen with Miso, Ginger and Shiitake Broth

INGREDIENTS:

FOR THE MISO, GINGER AND SHIITAKE RAMEN BROTH

πŸ”Ή1 shallot, chopped

πŸ”Ή3 dried shiitake mushrooms, chopped

πŸ”Ή1 clove garlic, minced

πŸ”Ή1 2″ piece ginger

πŸ”Ή3 cups veg broth

πŸ”Ή3 tbsp soy sauce

πŸ”Ή1 tbsp miso paste

πŸ”Ή1 tbsp neutral oil

πŸ”Ή2 tsp maple syrup

πŸ”Ή1 bird’s eye chili, chopped (optional)

METHOD

πŸ”ΉIn a pot heat up the oil then toss in the onions and saute 2 mins. Add the garlic, ginger and shiitakes and saute 2 more mins.

πŸ”ΉAdd the rest of the ingredients and bring to a boil then lower heat and let cook uncovered 10 mins.

πŸ”ΉRemove from heat, ladle onto your ramen bowl and enjoy..
